Spinach, feta + tomato quiche
1 Puff pastry sheet
10 pasture raised eggs
1 bag organic spinach
1/2 a yellow onion
2 garlic cloves
1.5 cups cherry tomatoes
1/4 cup greek yogurt (non fat or full fat)
1/4 cup crumbled feta
1/4 cup fresh basil
2 tbsp parsley
1 tsp garlic powder
1 tsp black pepper
1 tsp oregano
Method:
Preheat oven @ 350 f
Place puff pastry sheet in pie mold.
Mix eggs, feta, yogurt, and spices in a bowl until well combined.
Sautee yellow onion and garlic. Once cooked, add spinach.
Remove any excess liquid from spinach.
Roughly chop spinach mixture and let it cool.
Mix in spinach mixture with eggs.
Place mixure over puff pastry.
Add cherry tomatoes one by one on top to create a nice pattern.
Bake for 35-40 minute
