Spinach, feta + tomato quiche

1 Puff pastry sheet

10 pasture raised eggs

1 bag organic spinach

1/2 a yellow onion

2 garlic cloves

1.5 cups cherry tomatoes

1/4 cup greek yogurt (non fat or full fat)

1/4 cup crumbled feta

1/4 cup fresh basil

2 tbsp parsley

1 tsp garlic powder

1 tsp black pepper

1 tsp oregano

Method:

  • Preheat oven @ 350 f

  • Place puff pastry sheet in pie mold.

  • Mix eggs, feta, yogurt, and spices in a bowl until well combined.

  • Sautee yellow onion and garlic. Once cooked, add spinach.

  • Remove any excess liquid from spinach.

  • Roughly chop spinach mixture and let it cool.

  • Mix in spinach mixture with eggs.

  • Place mixure over puff pastry.

  • Add cherry tomatoes one by one on top to create a nice pattern.

  • Bake for 35-40 minute
